This is a welcoming, small-scale mill. A small construction hidden in amongst the white oak trees, in a secluded place in the peaceful hamlet of Montèze. It was right here in the town of Verfeuil that Claire Thomassot decided to embark on this adventure twenty-five years ago. She began producing olive oil. This native of the Gard, originally from Goudargues, but who moved to Verfeuil thirty-five years ago, first concentrated her efforts, along with her husband, on an ancient olive grove that she already owned in Goudargues.
Today, Thomassot oil mill has over 1,500 olive trees. "We planted picholine trees to be able to produce PDO (Protected Designation of Origin) Nîmes olive oil", said Claire Thomassot.
