Moulin Cornille - Coopérative Oléicole de la Vallée des Baux de Provence
Maussane-les-AlpillesThe Moulin Cornille olive oil mill welcomes you to a 17th-century construction, which has been devoted to making olive oil since the very beginning.
It is in the heart of the Baux-de-Provence Valley that the Cornille Mill has stood since 1620. It has everything to make a name for itself: attachment to the land, ancestral know-how, secrets of certified artisanal production and modern management. It offers a range of 7 different olive oils, including the famous AOP Vallées des Baux de Provence - Matured Olives (Fruité noir)
The mill has been a cooperative since 1924 and the typicality of the olive oils of the Baux de Provence valley comes from the association of 5 varieties of olive on a unique terroir (the Salonenque, the Grossane, the Béruguette or Aglandau, the Verdale des Bouches du Rhône and the Picholine).
Specialising in matured olive oil (sweet, with aromas of black olive, cocoa, sourdough bread, etc.), the mill also offers a green fruity oil, an organic oil and single variety oils of Picholine and Grossane.
You will also find a selection of local products in the shop: jams, honeys, broken olives... And for the pleasure of giving, a wide selection of gift boxes in delicatessen and cosmetics. You can of course taste our olive oil.
You will be able to discover our old granaries, which have been rehabilitated for the opening of our permanent exhibition "Le grenier à olives", which will open in June 2023. You will be able to discover the history of the Cornille Mill: from the soil to the olive oil, the manufacturing techniques, the elaboration of the oil with matured olives
